Chef Murata’s first venture outside Japan arrives in London as a collaboration with Hakkasan Group. It aims to adhere to two key principles – sourcing the finest local ingredients where possible rather than importing them from Japan, and training the most promising local chefs rather than bringing in an ex-pat team.
